Character lifestyle choices will also provide traits that give various bonuses in combat, like bonuses to leading cavalry or fighting enemies from another religion. Having a large army in harsh terrain like deserts and mountains will cause your army to suffer attrition, and armies defending in harsh terrain or across rivers will get a bonus to combat.
Terrain does matter for battles and movement. Certain cultures will also have access to certain units, like how Anglo-Saxons and Norsemen have huscarls, and steppe nomads have horse archers. For example, you may find cavalry useful when your enemy is using lots of light troops, but your cavalry should avoid pikemen. The majority of your troops are just levied peasants, but you can have mercenaries and a small group of elite soliders, (called retinues in CK2 and men-at-arms in CK3), whose weapons you can choose, and you should equips your men-at-arms and mercenaries for who you plan to be fighting. Instead, you move armies around and take castles, cities and temples by sieging them. For one thing there are no front lines like in HoI4, so there aren't any encirclements. Sort of, but not in the same way as HoI4.
